Strawberry Bacon Pizza

…because everything is better with bacon.

I happened to have a pound of fresh strawberries lying around. And it was a Friday night, which faithful readers know is pizza night in TTENG households. So of course, I had to try strawberries on a pizza.

Fruit on a pizza in general is very delicate. It has the (obvious) potential to be overly sweet.  You have to balance the sweet–and not be afraid to “over-balance”. Hence, creations like the cranberry/turkey/brie pizza. I really liked this pizza, though. It’s pretty mild and I fail to see (modulo finding someone who can’t or won’t eat bacon) how it could be anything but a crowd pleaser.

STRAWBERRY BACON PIZZA

INGREDIENTS

  • Pizza dough, flour, and Pam (or similar substance)
  • Strawberries
  • Salt
  • Pepper
  • Honey
  • Olive oil
  • Balsamic vinegar
  • Fresh mozzarella
  • Bacon
  • Spinach
  • Goat cheese

INSTRUCTIONS

  • Preheat the oven to 375*F.
  • Cut the strawberries in half, and mix with salt, olive oil, and honey. Bake for at least 30 minutes.

  • When the strawberries are cooked, add some balsamic vinegar. Set to the side.

  • Roll out the dough, using flour and Pam (or similar substance). Layer as follows:
    • Mozzarella and pepper

    • Balsamic soaked strawberries
    • Bacon
    • Goat cheese

  • Bake at 380-400*F for 15-20 minutes, or until done.
  • To serve, sprinkle fresh spinach on top.
